From the rugged terrains of Patagonia, Argentina, to the dynamic landscapes of the UAE.
A young boy's journey with grilling began in the most unexpected way. At just 13 years old, he found himself in front of a grill, driven by the challenge of cooking for his family. That first attempt? A disaster. But this boy was not one to back down from a challenge. Each failure fueled his passion, and with every success, his love for grilling grew. That boy was me, Manuel. Fire has been my companion ever since. Whether in the wilderness of Argentina, the urbanity of the UK, or the deserts of the UAE, I've always found a way to light a fire and cook.
When I moved to the UAE during the peak of COVID, the isolation was stifling. As the world slowly opened up, I realized the tools I needed for my style of cooking weren't available here. So, I took matters into my own hands. I designed and built grills that brought me closer to the warmth, music, and ambiance of a smoky fire under the vast Patagonian sky.
The name Darwin is a tribute to Charles Darwin, a pioneering explorer of Patagonia where he made several critical observations that would later influence his groundbreaking theory of evolution and also a nod to the transformative power of fire in human evolution. It's an homage to the land of Patagonia, the land that has shaped me, a place that forever holds my heart and to which I will always yearn to return, both in body and soul… Always accompanied by loved ones.
